Instant Pot Honey Glazed Carrots
These honey-glazed carrots are an easy, flavorful side dish with a hint of orange, honey, and Dijon mustard. Made quickly in the Instant Pot, they are perfectly tender and coated in a sweet and savory glaze that will have everyone coming back for seconds! Ingredients:
- 1 lb baby carrots
- 1 ½ tbsp butter
- 2 tbsp honey
- ½ tsp Dijon mustard
- Zest of 1 small orange
- ½ tsp Kosher salt
- Fresh parsley for garnish
Instructions:
Step 1 – Prepare the Carrots
- Add 1 cup of water to the Instant Pot and place the collapsible steamer basket inside. Put the baby carrots into the basket, ensuring they’re evenly distributed.
Step 2 – Pressure Cook the Carrots
- Secure the Instant Pot lid and set the pressure release valve to sealed. Cook on high pressure for 4 to 5 minutes. For tender-crisp carrots, cook for 4 minutes; for very soft carrots, set the timer for 5 minutes. Once the time is up, perform a quick release.
Step 3 – Make the Glaze
- Remove the steamer basket with the carrots and set them aside. Discard the water from the pot, then add butter, honey, Dijon mustard, orange zest, and kosher salt. Use the sauté function to melt the butter and combine everything into a smooth glaze.
Step 4 – Coat the Carrots
- Add the cooked carrots back to the Instant Pot and stir gently to coat them evenly with the honey glaze.
Step 5 – Serve
- Garnish with freshly chopped parsley and serve hot for a delicious, sweet side dish!
