Tompouce (Dutch Pastry with Cream)

Tompouce is a classic Dutch treat made of puff pastry, custard cream, and icing. You can make the custard filling easily in your multicooker for a rich and creamy result. The puff pastry can still be baked in the oven or air fryer.


Ingredients:

For the Puff Pastry:

  • 2 sheets of puff pastry (store-bought or homemade)

For the Custard Filling:

  • 500 ml whole milk
  • 100 g sugar
  • 3 egg yolks
  • 40 g cornstarch
  • 1 tsp vanilla extract

For the Icing:

  • 150 g powdered sugar
  • 1 tbsp water
  • A few drops of pink or orange food coloring (optional)

Instructions:

Prepare the Custard (in the Multicooker):

  • Set your multicooker to Sauté mode. In a bowl, whisk together the egg yolks, sugar, cornstarch, and vanilla extract.
  • Heat the milk in the multicooker until warm, then gradually pour the milk into the egg mixture while whisking continuously.
  • Switch the multicooker to Pressure Cook on high for 2 minutes, and allow the pressure to release naturally.
  • Stir the mixture until thickened into a custard consistency. Transfer the custard into a bowl and let it cool completely.

Bake the Puff Pastry:

  • Preheat your oven or air fryer to 180°C (350°F).
  • Cut the puff pastry sheets into rectangles (about the size you want your tompouce to be).
  • Place the puff pastry in the air fryer basket in a single layer and bake for 10-12 minutes or until golden brown and crispy, or bake them in the oven according to the package instructions.
  • Once done, remove the puff pastry and allow it to cool.

Assemble the Tompouce:

  • Once the puff pastry has cooled, place one layer on a serving plate.
  • Pipe or spread the cooled custard over the pastry.
  • Place the second layer of puff pastry on top.
  • For the icing, mix the powdered sugar with water and a few drops of food coloring. Spread the icing on top of the second pastry layer.
  • Let the icing set for a few minutes before serving.
