Need dinner on the table fast? These juicy chicken fajitas come together in just 20 minutes using the air fryer — no oven or stovetop required.

With only 9 main ingredients (plus a few optional toppings), this recipe is energy-saving, quick, and family-friendly. The veggies roast perfectly while the chicken stays moist and full of flavour.

Add salsa, black beans, a squeeze of lime and your favourite toppings, and you’ve got a delicious, balanced meal everyone will love.

Ingredients

  • 2 bell peppers
  • 2 red onions
  • 1 sachet fajita spice (e.g. Old El Paso)
  • 1 tomato
  • Fresh coriander, chopped
  • 2 chicken breasts
  • 1 tin black beans

For serving:

  • Wraps
  • 1 lime
  • Avocado (optional)
  • Sour cream (optional)
  • Cheese (optional)

Prepration Method

Step 1: Prep the veggies
Slice the peppers into strips and remove the seeds. Peel the onions and reserve half for salsa. Cut the rest into wedges.
Place the onions and peppers in a bowl, drizzle with a little oil and toss with half the fajita spice mix.

Step 2: Start cooking the veggies
Add the seasoned vegetables to the air fryer basket in an even layer.
Select Air Fry, set temperature to 190°C, and time to 7 minutes. No need to preheat.

Step 3: Make a quick salsa
While the veggies cook, finely dice the reserved onion half and the tomato. Toss with chopped coriander and a pinch of salt. Set aside.

Step 4: Prep the chicken
Slice the chicken breasts into 1 cm strips and season with the remaining fajita spice. Drizzle with a little oil and mix to coat evenly.

Step 5: Add chicken to air fryer
Once the veggies are done, spread the chicken strips over them in an even layer.
Select Grill, set temperature to 205°C, and time to 5 minutes.

Step 6: Get sides ready
While the chicken cooks, drain and rinse the black beans, warm the wraps, and cut the lime into wedges. Prepare your toppings.

Step 7: Finish and serve
Once cooking is complete, transfer the chicken and veggies to a serving dish.
Add the black beans, a squeeze of lime, and extra coriander to taste.
Serve with wraps, salsa, and your favourite toppings.
