Instant Pot Slow Cooked Turkey Meatballs in Marinara Sauce
Ingredienten:
Meatballs:
- 1 tbsp olive oil
- 1/2 yellow onion finely diced
- 2 garlic cloves minced
- 1 lb ground turkey
- 1/2 cup fresh parsley finely chopped
- 1/4 cup fresh basil finely chopped
- 1 egg
- 1 tsp salt
- 1 tsp pepper
Sauce:
- 28 oz can crushed tomatoes
- 14 oz can diced tomatoes
- 2 tbsp tomato paste
- 1/2 yellow onion finely diced
- 2 garlic cloves minced
- 1 tbsp fresh parsley finely chopped
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/4 tsp red pepper flakes optional
Garnish:
- grated parmesan cheese
- Freshly chopped basil
Instructions:
Start by preparing the turkey meatballs:

Select SEAR/SAUTE – High – 10 minutes and press START.

When pot is preheated, add 1 tbsp of oil to the inner pot and add the onions. Sauté the onions for 5 minutes, stirring occasionally.

Add the garlic and stir well. Press CANCEL.

Transfer the onion and garlic to a large bowl.

Add the remaining ingredients for the meatballs to the bowl and mix to combine well.

Use your hands to gently roll out the meatballs, about 1.5 inches in diameter. This makes about 15-18 meatballs.
Note: Be gentle rolling out the meatballs. Ground turkey is softer than ground beef and the mixture will be very soft until cooked through and firm.)
Now prepare the marinara sauce:

Select SEAR/SAUTE – High – 10 minutes and press START.

When the Instant Pot is preheated, add 1 tbsp of oil to the inner pot and add the onions. Sauté the onions for 5 minutes, stirring occasionally.

Add the garlic and stir well. Press CANCEL.

Add the tomato paste, stir well and cook for 1 minute.

Add the remaining ingredients for the sauce and stir well.

Gently place the turkey meatballs into the pot, and use a spoon to gently push the meatballs down, and spoon sauce over the top of the meatballs so they are coated well in the sauce.

Select SLOW COOK-Custom-High and set the time for 4 hours. Make sure the pressure release is on VENT.

Serve turkey meatballs over zucchini noodles or spaghetti squash, and top with freshly grated parmesan cheese!
