Ingredients:
- 500 g beef stew meat (or use leftover roast beef)
- 2 tbsp butter
- 2 tbsp flour (plus extra for coating)
- 1 small onion, finely chopped
- 500 ml beef stock (or broth)
- 1 tsp mustard
- 1 tsp soy sauce
- Salt and pepper, to taste
- 1 egg (for coating)
- Bread crumbs, for coating
- Fresh parsley (optional)
Instructions:
Make the Beef Filling:
- In a large pot, melt the butter and sauté the onion until soft and golden.
- Add the beef stew meat (cut into small pieces if using leftover roast beef) and cook until browned.
- Stir in the flour and cook for about 1-2 minutes to form a roux.
- Gradually add the beef stock, stirring continuously, until the mixture thickens to a ragout consistency. Add the mustard, soy sauce, salt, and pepper to taste. Let it cook for about 10-15 minutes until the filling has thickened.
- Remove from the heat and let the filling cool. You can place it in the fridge to speed up the cooling process if needed.
Shape the Bitterballen:
- Once the filling has cooled, use your hands to shape it into small, bite-sized balls (about 1-inch in diameter).
- Roll each ball in flour, then dip them in the beaten egg, and finally coat them with bread crumbs. Repeat the process for all the bitterballen.
Air Fry the Bitterballen:
- Preheat your air fryer to 180°C (350°F).
- Lightly spray or brush the bitterballen with oil to ensure a crispy exterior.
- Place the bitterballen in the air fryer basket in a single layer, ensuring they aren’t overcrowded.
- Air fry for about 8-10 minutes, turning them halfway through until golden brown and crispy.
Serve:
- Serve your bitterballen hot with mustard on the side for dipping. Garnish with fresh parsley if desired.
