INGREDIENTS

For the Cake:

  • 120g plain flour
  • 40g cocoa powder
  • 1 tsp baking powder
  • ¾ tsp baking soda
  • ½ tsp sea salt
  • 200g brown sugar
  • 1 tsp espresso powder
  • 125ml boiling water
  • 130g buttermilk
  • 60ml vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract

For the Icing:

  • 60g butter
  • 65g cocoa powder
  • 260g icing sugar
  • 100ml milk
  • 1 tsp vanilla extract
  • ½ tsp salt
  • Sprinkles (for decoration)

 

EQUIPMENT:

8 x 11-inch baking sheet (with sides at least 1.5 inches high) or a similar baking dish that fits your VersaZone Air Fryer

INSTRUCTIONS

1- Prepare the Cake Batter

  • In a large mixing bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, mix the brown sugar, espresso powder, and boiling water until the sugar dissolves completely.
  • Add the buttermilk, vegetable oil, egg, and vanilla extract to the dry ingredients, mixing until well combined.
  • Gradually pour in the espresso mixture, stirring until just combined.
  • Line your baking dish with parchment paper, then pour in the batter, spreading it evenly.

 

2- Bake the Cake in the Air Fryer

  • Select 'Bake' on the Instant Vortex Air Fryer and set the temperature to 160°C with a cook time of 28 minutes.
  • Allow the air fryer to preheat, then place the baking dish inside when prompted.
  • Bake until a skewer inserted in the center comes out clean.
  • Remove from the VersaZone and let the cake cool completely before icing.

 

3- Make the Icing

  • While the cake cools, sift the cocoa powder and icing sugar to remove any lumps.
  • Add the milk, vanilla extract, and salt, then beat the mixture until smooth and creamy.
  • Using an electric mixer, beat the icing until light and fluffy.

 

4- Assemble & Decorate

  • Spread the icing evenly over the cooled cake.
  • Finish with a generous sprinkle of colorful sprinkles.
