S’mores Pots (No-Bake Dessert)

Ingredients
- 150 ml double cream
- 30 ml full-fat milk
- 180 g dark chocolate, finely chopped
- Pinch of salt
- 8 Lotus biscuits (or other caramelised biscuits)
- 20 g melted butter
- 12–16 large marshmallows
Preparation Method
- In a heatproof bowl, combine the cream and milk, and warm it in the microwave until hot. Pour it over the chopped chocolate and let sit for 2–3 minutes. Add a pinch of salt and stir until smooth to form a ganache.
- Crush the biscuits into fine crumbs, then mix with the melted butter. Divide the mixture between 4 ramekins and press down firmly to form a base.
- Spoon the chocolate ganache evenly over the biscuit bases. Place the ramekins in the freezer and let them firm up for 1–2 hours.
- Once ready to serve, dot each ramekin with 3–4 marshmallows on top of the frozen ganache.
- Place the ramekins in the air fryer and select Grill at 205°C for 2–3 minutes, or until the marshmallows are golden and toasted.
- Remove carefully, allow to cool for 1 minute, then dig in immediately — the warm toasted marshmallows contrast beautifully with the chilled, creamy chocolate underneath.
